Yuzu Miso Glazed Ming Prawns

Ingredients
  • 200g large Ming prawns, shell-on deveined
  • Glaze

    • 1 tbsp white miso paste
    • 1 tbsp yuzu juice (or fresh lemon juice)
    • 0.5 tbsp low-sodium soy sauce
    • 0.5 tsp honey
    • 0.5 tsp sesame oil
    • 1 garlic cloves, minced
    • 0.5 tsp fresh ginger, grated
  • 0.5 tsp toasted sesame seeds
  • 1 spring onions, thinly sliced

Instructions
  1. Make the glaze
  2. Whisk together all the Glaze ingredients in a bowl until smooth.
  3. Marinate prawns
  4. Pat the Ming prawns dry. Toss with half the glaze and marinate for 15 minutes
  5. Grill or pan-sear
  6. Heat a grill pan or non-stick skillet over high heat. Sear prawns 2–3 minutes per side until shells are charred and flesh is opaque.
  7. Glaze and finish
  8. In the last 30 seconds, brush remaining glaze over prawns. Remove from heat immediately to avoid burning.
  9. Plate and garnish
Arrange on a plate. Scatter the toasted sesame seeds and 1 spring onions, thinly sliced over the top. Serve immediately.

Tips
  • Swap yuzu with fresh lime if unavailable.
  • White miso keeps calories lower than red miso.

Suggested Food Pairing
  • Steamed brown rice or cauliflower rice
  • Chilled cucumber salad
  • Warm edamame with sea salt
