Ingredients
- 500g Threadfin Kurau fillet, cut into bite-sized pieces
- 1 cups fresh Thai basil leaves, loosely packed
- 4 garlic cloves, minced
- 2 fresh red chilli, sliced
- 2 tablespoons oyster sauce
- 1 tablespoons fish sauce
- 1 tablespoons light soy sauce
- 0.5 teaspoons sugar
- 3 tablespoons cooking oil
- 2 tablespoons water
Instructions
- Mix the sauce
- Mix oyster sauce, fish sauce, light soy sauce, sugar and water in a small bowl to form the stir-fry sauce. Set aside.
- Fry aromatics
- Heat cooking oil in a wok or large pan over high heat until smoking. Add minced garlic cloves and sliced fresh red chilli — stir-fry for about 30 seconds until fragrant.
- Stir-fry the fish
- Add Threadfin Kurau fillet, cut into bite-sized pieces in a single layer. Sear without stirring for 1 to 2m 30s, then toss gently for another minute until just cooked.
- Add the sauce
Pour the sauce over the fish. Toss to coat evenly and cook for 1 more minute. - Add basil and serve
Turn off the heat. Add fresh Thai basil leaves and toss quickly — the residual heat will wilt the basil just enough. Serve immediately over steamed rice.
Tips
- Add the Thai basil leaves last and toss off the heat — this keeps the basil vibrantly green and fragrant.
- Do not overcrowd the wok; cook in batches if needed to ensure the fish sears rather than steams.
