Ingredients
- 200g Kurau fish (finely minced or scraped)
- 1 egg white
- 1 tbsp corn flour
- 1 tsp sesame oil
- ½ tsp salt
- A dash of white pepper
- 1 stalk spring onion, finely chopped (optional)
- Oil for pan-frying
Instructions
- Using a spoon, scrape the flesh from the Kurau fillet and mince finely until paste-like.
- In a bowl, combine fish paste, egg white, cornflour, sesame oil, salt and white pepper. Stir in spring onion if using.
- Lightly oil your hands and shape the mixture into small round patties.
- Pan-fry: Heat a pan with a little oil. Fry patties over medium heat for 4–5 minutes per side until golden and cooked through.
- Drain excess oil and serve warm.
