Kurau Fish Paste Patties

Ingredients
  • 200g Kurau fish (finely minced or scraped)
  • 1 egg white
  • 1 tbsp corn flour
  • 1 tsp sesame oil
  • ½ tsp salt
  • A dash of white pepper
  • 1 stalk spring onion, finely chopped (optional)
  • Oil for pan-frying

Instructions
  1. Using a spoon, scrape the flesh from the Kurau fillet and mince finely until paste-like.
  2. In a bowl, combine fish paste, egg white, cornflour, sesame oil, salt and white pepper. Stir in spring onion if using.
  3. Lightly oil your hands and shape the mixture into small round patties.
  4. Pan-fry: Heat a pan with a little oil. Fry patties over medium heat for 4–5 minutes per side until golden and cooked through.
  5. Drain excess oil and serve warm.

  • Beehoon soup or plain noodles
  • Thai sweet chilli sauce or light soy dip
  • Stir-fried cabbage with carrot
  • Can also be added into porridge or soup for kids
