Ingredients
- 400g Kurau fish fillet, cut into nugget-sized pieces
- 0.5 cups all-purpose flour
- 2 large eggs, beaten
- 1 cups panko breadcrumbs
- 0.5 tsp garlic powder
- 0.5 tsp paprika
- 0.5 tsp salt
- 3 tbsp cooking oil, for frying
Dipping Sauce
- 3 tbsp mayonnaise
- 1 tbsp honey
- 1 tbsp yellow mustard
Instructions
- Season the fish
- Pat Kurau fish fillet dry with paper towels and cut into nugget-sized pieces. Season lightly with salt.
- Set up breading station
- Prepare 3separate bowls — one with all-purpose flour, one with beaten eggs, beaten, and one with panko breadcrumbs mixed with garlic powder and paprika.
- Bread the nuggets
- Coat each fish piece in flour, dip into egg, then press firmly into the panko mixture. Repeat until all pieces are coated.
- Chill
Place breaded nuggets on a tray and refrigerate for 10 minutes to help the coating adhere. - Fry until golden
Heat cooking oil, for frying in a pan over medium-high heat. Fry nuggets in batches for 2–3 minutes per side until golden brown and cooked through. - Make the dip

- Air fryer option: Spray breaded nuggets with oil and air-fry at 200°C for 10–12 minutes, flipping halfway. For extra crunch, double-coat in panko before frying.
