Crispy Kurau Fish Nuggets

Ingredients
  • 400g Kurau fish fillet, cut into nugget-sized pieces
  • 0.5 cups all-purpose flour
  • 2 large eggs, beaten
  • 1 cups panko breadcrumbs
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 3 tbsp cooking oil, for frying
  • Dipping Sauce

    • 3 tbsp mayonnaise
    • 1 tbsp honey
    • 1 tbsp yellow mustard

Instructions
  1. Season the fish
  2. Pat Kurau fish fillet dry with paper towels and cut into nugget-sized pieces. Season lightly with salt.
  3. Set up breading station
  4. Prepare 3separate bowls — one with all-purpose flour, one with beaten eggs, beaten, and one with panko breadcrumbs mixed with garlic powder and paprika.
  5. Bread the nuggets
  6. Coat each fish piece in flour, dip into egg, then press firmly into the panko mixture. Repeat until all pieces are coated.
  7. Chill
    Place breaded nuggets on a tray and refrigerate for 10 minutes to help the coating adhere.
  8. Fry until golden
    Heat cooking oil, for frying in a pan over medium-high heat. Fry nuggets in batches for 2–3 minutes per side until golden brown and cooked through.
  9. Make the dip
  10. Mix dipping sauce ingredient together in a small bowl. Stir until smooth.

Tips
  • Air fryer option: Spray breaded nuggets with oil and air-fry at 200°C for 10–12 minutes, flipping halfway. For extra crunch, double-coat in panko before frying.
