Ingredients
- 500g Threadfin Kurau fillet, skin-on
- 1.5 tablespoons white miso paste
- 1 tablespoons butter
- 1 tablespoons honey
- 1 tablespoons light soy sauce
- 1 teaspoons rice vinegar
- 2 tablespoons cooking oil
- 0.3 teaspoons white pepper
- 1 teaspoons toasted sesame seeds (garnish)
- 1 spring onion, finely sliced (garnish)
Instructions
- Make the miso glaze
Mix white miso paste, butter, honey, light soy sauce and rice vinegar together in a small bowl to form the miso butter glaze. Set aside. - Prep and heat pan
Pat Threadfin Kurau fillet dry. Season lightly with white pepper. Heat cooking oil in a non-stick pan over high heat. - Sear the fish
Place fish skin-side down. Sear for 4 minutes without moving until skin is golden and crisp. Flip and cook for 1 more minute. - Glaze and baste
Reduce heat to medium-low. Spoon the miso glaze over the fish. Cook for 1–2 minutes, basting continuously, until the glaze caramelises and coats the fish. - Serve
Plate immediately and garnish with toasted sesame seeds and spring onion. Serve with steamed rice or a simple salad.
Cooking Tips
- Mix the miso glaze before heating the pan so it's ready to go the moment the fish is flipped.
- Do not press down on the fish while searing — let it release naturally.
- The glaze caramelises quickly, so watch it closely in the final minute.
