Ingredients
- 260g Threadfin Kurau fish fillet, cut into chunks
- 188g spaghetti or penne pasta
- 1.5 garlic cloves, minced
- 0.8 small onion, finely diced
- 0.8 cups canned crushed tomatoes
- 2.3 tbsp cooking cream or heavy cream
- 0.8 tbsp butter
- 1.5 tbsp olive oil
- 0.4 tsp salt
- 0.2 tsp black pepper
- 0.4 tsp dried Italian herbs
- 1.5 tsp grated Parmesan cheese (to serve)
Instructions
- Boil the pasta
- Cook spaghetti or penne pasta in salted boiling water according to package instructions. Reserve ¼ cup pasta water before draining.
- Cook the fish
- Season Threadfin Kurau fish fillet, cut into chunks with salt and black pepper. In a pan, heat olive oil over medium heat. Add fish and cook for 4 minutes per side until just cooked. Remove and set aside.
- Sauté aromatics
- In the same pan, melt butter. Sauté diced small onion for 3 minutes, then add minced and cook for 1 more minute until fragrant.
- Simmer the tomato sauce
Add canned crushed tomatoes and dried Italian herbs. Stir and simmer for 5 minutes until sauce thickens slightly. - Add cream and fish, Toss with pasta
Stir in cooking cream or heavy cream and a splash of reserved pasta water. Gently fold in the cooked fish chunks. Add drained pasta to the pan. Toss everything together over low heat for 1 minute until well coated. - Serve
Tips
- Use penne or fusilli for younger kids as it's easier to scoop. Swap cream for whole milk for a lighter sauce. Add a pinch of sugar if tomatoes taste too acidic.
